Here are a few tips for taking reasonable time-lapse videos with a smart phone camera.

After choosing the right shutter speed with a reference that when adequate light is there than speed is 1/50. The low light high ISO number is required with a sharp focus. After, the manual setting of the camera, one has to choose and set time-lapse interval (number of frames per second -FPS), The thumb rule is that for the fast movement select the shorter intervals (1-4 seconds) and for slower movement 10 to 30 seconds. However, you may have to experiment with an aperture to bring the moving subject in focus with enough light and right field of depth.

Since time lapse photography is the presentation of a movement as a sequence of still images in high resolution, it would be experiment with the following situations.
